Slow Cooker Beer Chili

Super Bowl Recipe: Warm up on game day with this deliciously slow-cooked beer chili.

Now, I know several of you may be partaking in some adult beverages today (Maybe more than several ... and no one's judging!)  There may even be a chance you MIGHT just have one extra beer to spare.  If so, you're going to want to put this Beer Chili in your slow cooker today while you veg out on the couch and watch the game. It smells DIVINE while slowly cooking itself away, tastes incredible and takes virtually no effort to put together.  

Chili is one of my favorite foods in the world.  It's really hard to mess it up ... especially in the slow cooker. This chili was wonderful! I was afraid the flavor of the beer wouldn't come through and BOY, was I wrong: the beer flavor came through loud and clear!  Serve this up with the tortilla chips most of you already bought for the game today, or make some sweet corn bread.  

Some of you might be thinking right now, "Oh, Hope, this sounds delicious!  I really want to make this today, but I don't have a couple of the ingredients."

No problem.  I'm here to help!

Don't have ground beef?  Use ground turkey or ground sausage.

Don't have black beans?  Try kidney beans, pinto beans or chili beans.

Don't have cumin?  Use extra chili powder, add smoked paprika or some hot sauce.

Don't have the diced tomatoes with green chilis?  Use chili-ready tomatoes instead, or regular diced tomatoes with a can of diced green chilis.  If you only have regular diced tomatoes, just use those and add the heat with extra chili powder.

See, I wouldn't leave you hanging!  Now you have no excuse but to put this in your slow cooker right now. I just know you're going to love it!

Beer Chili

Ingredients (serves about 4)

  • 1/2 lb. ground beef, browned with salt and pepper
  • 1 large onion, chopped
  • 1 15.25 ounce can black beans
  • 1 14.5 ounce can diced tomatoes with green chilies
  • 4 ounce tomato sauce
  • 12 ounce beer (you choose the type)
  • 1 beef bouillon cube
  • 1 Tbsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. cumin
  • 1 tsp. chili powder


Get your beef cooking with some salt and pepper while you assemble the rest of the ingredients.  Place your onions into your crock. Next, pour in the black beans and diced tomatoes.  Add the tomato sauce, bouillon cube, garlic powder, onion powder, cumin and chili powder. Now, add the beer! Finally, add the ground beef and stir. Cook on LOW for 7-10 hours or on HIGH for 4-5 hours. Enjoy with some yummy cornbread or tortilla chips!
