Slow Cooker Apple and Onion Pork Loin

This slow-cooked, sweet and savory pork loin will make your family part of the "clean plate club!"

Before I get to this week's recipe, I want to share a little tip with you: If you plan out your meals for the week, or even up to a month in advance, you will save yourself some money at the grocery store.  Even better, if you shop the ads and find out what meats, veggies, etc. are on sale and plan your recipes around those, you'll save yourself even more money!  Make sure you plan for leftovers, or plan to freeze what's leftover so you have freezer meals for a later date.

Now, on to the recipe this week....

It's the time of year where there aren't many (affordable) choices at the grocery store when it comes to fruit.  Peaches and nectarines are starting to make their way back, but apples are in abundance. Pork roasts and loins seem to always be on sale at the grocery store, so this Apple and Onion Pork Loin will be perfect for this time of year (or any time really!)  

This meal takes virtually no time to put together.  It has SO much flavor and will please even the pickiest eater in your house!  All members of my family were part of the "clean plate club" the evening I served this. Now, that's a miracle!

I'm all about easy, so I promise this won't take you long to assemble.

If you prefer pears, those would be a great substitute here as well and would be delicious.  If you don't like pork, try this with chicken leg quarters.

Apple and Onion Pork Loin

Ingredients: 
2.5-3 lb. boneless pork loin
1 chicken bouillon cube
6 tbsp. (approximately) McCormic Savory Herb Roasting Rub (If you can't find this, make your own rub with 2 tsp. garlic powder, 2 tsp. minced onion, 1 tsp. salt, 2 tsp. sage, 2 tsp. thyme and 2 tsp. rosemary)
1 onion, halved and sliced
3-4 apples, (whatever kind you like) peeled and sliced
1/2 cup water
olive oil 

Directions:
In your crock, place your pork loin. Coat it with olive oil and cover your loin with your rub all over.  Put your bouillon cube in with 1/2 cup of water and top your pork loin with the apples and onions.

Cook on LOW for 8-10 hours or on HIGH for 4-5 hours. ENJOY!
